• Place the grain of your choice into a glass bowl and cover completely with filtered warm water.
  • For every 1 cup of liquid you will need 1 tbsp of acidic medium.
  • Acidic medium options: cultured dairy (yogurt, buttermilk, kefir, whey), lemon juice, apple cider vinegar, and coconut kefir.
  • All grains need to be soaked for 12-24 hours (except buckwheat, brown rice, and millet, which should be soaked for 7 hours).
  • Place your bowl of soaking grains on the counter top and cover with a clean towel.
  • Use a rubber band around the circumference to hold the towel in place.
  • Allow the grain to sit in a warm place (counter top or the oven with the oven light on) for the time needed for that particular grain.
  • Drain after soaking, rinse if you would like, and then proceed with the recipe. *Many soaked grains will take less time to cook vs non soaked grains.
